Boniato Ball Dessert
serves 4

3/4 pound boniato (sweet potato-see photo)
1 cup sticky rice flour (glutinous rice flour)
1 1/2 cup tapioca starch
1/4 teaspoon baking powder
3 egg yolks (beaten)
1/3 cup sugar
1/3 cup coconut cream
peanut oil for deep-frying

1. Peel boniato and cut into small pieces. Boil for 15 minutes, or until soft. Remove from heat, drain, and mash (or use a food processor).

2. In a mixing bowl, combine sticky rice flour, tapioca starch, and baking powder and mix thoroughly, then set aside. In another mixing bowl, add the egg yolks, sugar, coconut cream, and mashed boniato and stir until it’s thoroughly mixed. Add the sticky rice flour mixture and stir until everything’s thoroughly combined.

3. Preheat peanut oil to 375 degrees in a deep-fryer or pan. Form boniato mixture into round balls, about 1 inch in diameter. Deep-fry until golden brown, approximately 5 minutes. Remove from oil with a wire strainer and drain on paper towels. Dust with cinnamon and sugar and serve immediately with hot coffee or tea.
